This is yummy, and easy! You can marinate the chicken either the night before or in the morning, and then bake it in the same dish.
I found this recipe in one of my favorite cookbooks, The Petit Appetit Cookbook, by Lisa Barnes.
INGREDIENTS
4 boneless, skinless chicken breasts
1/4 cup honey
1/4 cup dijon mustard
1-1/2 t curry powder
1 T tamari
Place the chicken in a casserole dish. Whisk together the marinade and pour it over the chicken. Cover and marinate for at least 6 hours, turning once or twice to coat the chicken.
Cover with foil and bake at 350 degrees for 30 minutes. Uncover and bake for 15 minutes more.
Really good with mashed potatoes and green beans.
